I haven't been looking for veggie... But I've noticed a LOT of Halal venders use quite a few vegetarian dishes. And I know that Zaidi's Grill (very new, VERY good) has a lot of good things there including a specific menu for vegetarian stuff. However, if something looks kind of good but has meat, you can ask him if he can make you a vegetarian version of it. He's really well known through the community here and for a really long time (even though his restaurant is new) and I trust him very much.
